Now that Miss A has started eating more and more table food and declared her toddler independence, we have started looking for recipes that will feed her and us for dinner. Many are just misses, but this one from the Baby Center was a hit with everyone. That said, being a “hit” with a one-year-old A means most of it didn’t get thrown to the floor.

  1. Preheat the oven to 400 degrees. I boiled the apple cider to reduce it a bit. Grease the bottom of a medium-size roasting pan or an ovenproof skillet (like our favorite cast iron skillet!) with the olive oil.
  2. Arrange the apples on the bottom of the pan, layered as needed.
  3. Place the pork chops on top.
  4. Then sprinkle with the sage, salt and pepper and pour the cider on top.

My opinion:
We didn’t actually baste the meat once or twice as the directions indicate and it probably wouldn’t have made much of a difference. Since we were eating this as a family, I didn’t “season with authority” (as J is so fond of saying!), but we were able to add seasoning at the table for our liking. All in all we would eat this again.

I’ll admit I was skeptical about this recipe. But after one bite, I wasn’t skeptical at all. It was deliciously flavorful and less labor intensive than we thought it would be. Warning: it’s pretty filling.

Ingredients:
1 tb Ground allspice
1 tb Dried thyme
1 1/2 ts Cayenne pepper
1 1/2 ts Black Pepper freshly ground
1 1/2 ts Ground sage
3/4 ts Ground nutmeg
3/4 ts Ground cinnamon
2 tb Salt
2 tb Garlic powder
1 tb Sugar
1/4 c olive oil
1/4 c Soy sauce
3/4 c White vinegar
1/2 c Orange juice
Juice of 1 lime
1 Scotch bonnet pepper, Seeded and finely chopped (if you can’t find this, feel free to use a habanero)
1 c white onion Chopped
3 Green onions finely chopped
4 6-oz Chicken breasts Trimmed of fat, up to 8-oz each

Directions:
In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. With a wire whisk, slowly add olive oil, soy sauce, vinegar, orange juice and lime  juice. Add the Scotch bonnet pepper (we used habaneros since we couldn’t find Scotch Bonnet), onion and green onions and mix well. Reserve about a cup or so of the marinade to use later. Add the chicken breasts, cover and marinate for at least an hour, but the longer the better! Remove the breasts from the marinade and bake at 350 degrees for about 20 minutes. If you prefer a sear, turn on the broiler and broil each side first for a few minutes and then bake. Or if you prefer, fire up the grill and cook for 6 minutes on each side or until fully cooked. While grilling or baking, baste with the left over marinade. Heat the rest of the leftover marinade and serve on the side for dipping (we just did this on the stove). If you prefer more intense flavors, feel free to double the spices.

My opinion:
Even without doubling the spices, this was plenty hot. It was the right combination of sweet and spicy and the chicken was very moist. We will try this on the grill next time! The rice and slaw will be in another post. I”m having trouble locating the original recipes to link back to at the moment.

Pumpkin Ravioli

I’m learning to like pumpkin. It’s not that I don’t like it, so much as I’m ambivalent, sometimes it’s great. Other times, not so much. We didn’t want to waste the wonderful pumpkins we got from the Hartsburg Pumpkin Festival, so after checking out a number of recipes, we settled on this Pumpkin Ravioli recipe from Food.com. Only after we’d settled on this plan, did I learn that pumpkins for eating are different from carving pumpkins. Luckily, Austin American-Statesman food writer, Addie Broyles, helped me plan. So we carved and then roasted the pieces.

Ingredients:
8 tbsp Butter (one stick)
1 tbsp Sage, Fresh, chiffonade8 oz Pumpkin1 medium Yellow Onion, diced1/2 cup Pine Nuts (Toasted. We used olive oil and salt and pepper)12 oz Wonton Wraps (one package)2 eggs3 Roma Tomatoes, diced (the last from our garden!)3 tsp Lemon Juice (or half a fresh lemon)

Directions:

1. Add 1 tablespoon butter to each pumpkin half, and season with salt and pepper. Add 1 tablespoon butter to onion, season with salt and pepper and wrap in aluminum foil. In a preheated 350-degree oven, roast onion and pumpkin, cut-side up, until completely soft and somewhat caramelized, about 45 minutes. (If using roasted, roast pumpkin first at 400 degrees for about 45 minutes. Remove skin and dice. Sautee in butter salt and pepper with the diced yellow onion. Then move on to step 2.)

2. Add cooked pumpkin and onion in a food processor (we used a blender), pulsing until smooth. Adjust seasoning with salt and pepper. Transfer pumpkin puree into a bowl, add half of the toasted pine nuts and 1 beaten egg and stir to combine.

3 Cover wonton wrappers with a damp cloth. Assemble bowl of pumpkin puree, beaten egg, pastry brush and a sheet tray dusted with flour. Lay out 1 wonton wrapper and place a heaping tablespoon of pumpkin puree in the middle. Brush around the filling with beaten egg and cover with another wonton wrapper. Press edges. Place raviolis on a sheet tray and put in freezer.

4. In a small sauce pot, add remaining butter and cook on medium heat until the butter bubbles and turns brown. Remove from heat and add tomatoes, sage and a squeeze of lemon. Season with salt and pepper.

5. Cook ravioli in boiling water until they float. (Note: This happens quickly!) Transfer ravioli to 4 warm bowls and drizzle with brown sage butter sauce. Top with remaining toasted pine nuts.

My Opinion:
The first taste was off, but by the third I couldn’t stop eating. Some bites were very pumpkin flavored, others more subtle. It’s filling, not terribly difficult and a lovely fall flavored dish. Another few dashes of salt and pepper made a difference. J added Parmesan cheese. We will be making it again.

Homemade Pasta Sauce

Last week J and I challenged ourselves to not go grocery shopping and use up the items in our pantry, freezer and fridge. That experiment led to some pretty creative meals. One of the best was our homemade pasta sauce.

Ingredients:
small can pasta sauce (plain, no seasoning)
tomato paste
can whole or crushed tomatoes (you can also use fresh! 2 cups of fresh equals about 14.5 ounces chopped tomatoes. When we use fresh we don’t peel, but you may want to!)
Italian seasoning (we used oregano, basil, marjoram, sage and white pepper. You can use whatever you like!)
Burgundy wine
garlic

Directions:
Combine everything in one saucepan. Bring to a boil. Turn down heat to medium low or low. Let simmer for about an hour. This will cook down.

My opinion:
This was wonderful! Easy and filling. We actually originally used too much Italian seasoning, but by adding the wine and a can of tomato sauce, everything blended very well. In the future, we’ll add onions and maybe some green peppers to add variety as well as some red pepper flakes.
