While the options for dairy and gluten free frozen desserts has expanded in the last few years, the options for gluten and dairy free ice cream sandwiches has not. So we made our own!
Place one Takes Bake Shop Gluten Free cookie on a plate.
Scoop the ice cream onto the cookie.
Top with the second cookie.

We have loved the Tate's Bake Shop Gluten Free Chocolate chip cookies. They hold up really well in almond milk, make for great additions to dairy free milk shakes and as we recently discovered make excellent options for dairy free ice cream sandwiches! They are crunchy and thin so the ice cream melts right in. Delicious!
